A couple simple, quick, and healthy meals:

Roasted Root-Veggies and Tofu




Soba (buckwheat) Noodles, Scrambled Tofu, Mixed Veggies

  2. I was a vegan for 2 years. My husband is in the military (and not fond of tofu or carrots) and when he is away sometimes we have some vegan meals.
